CARAMELIZED ONION, HORSERADISH CAULIFLOWER MASH
This is a simple side dish that pair nicely with most meats.
1 Large Head Cauliflower – Cleaned and Trimmed
1 Medium Onion – Thinly Slices
2 Tbs. Minced Garlic
2 Tbs. Butter
2 Tbs. Olive Oil
¼ Cup Sour Cream
¼ Cup Creamy Horseradish
Salt and Pepper – To Taste
(2 Tbs. Peace and Love)
In a large sauté pan over low-medium heat, add onions, garlic, butter, olive oil and salt and pepper. Cook until onions are nice and caramelized - About 30 minutes.
While the onions are caramelizing, fill a large sauce pan with 1 inch of water. Over high heat, steam the cauliflower, whole and, covered, until fork tender – About 15 minutes.
Once the cauliflower is fork tender, drain the water and leave cauliflower in the hot pan to help draw out some of the excess moisture.
Fork mash the cauliflower in the pan. Add caramelized onions, sour cream, horseradish sauce, and salt and pepper to the pan. Using a potato masher , mash all ingredients together.

Cook Time – 45 Minutes
