ROASTED TOMATILLO AVOCADO SALSA VERDE
I love tomatillo salsa. Adding avocado to this recipe adds a wonderful creaminess to the texture of this salsa.
1 lb. Tomatillos – Stems Removed and Husked
3 oz. Red Onion – Cut Into Large Pieces
4 Large Cloves Garlic
1 Serrano Pepper – Minced
1 Tbs. Fresh Cilantro – Chopped
1 ½ tsp. Sea Salt
1 tsp. Lime Juice
¾ tsp. Cumin
½ Cup Chicken Stock
1 Medium Avocado – Peeled and Pitted
(2 Tbs. Peace and Love)
Line a rimmed baking sheet with aluminum foil.
Rinse tomatillos and slice in half. Place tomatillos cut side down on foil, along with onions and garlic. Drizzle with olive oil and broil on high 5-7 minutes, or until tomatillos are slightly charred and start to blister.
To a blender or food processor add tomatillos, onion, garlic, Serrano, cilantro, sea salt, lime juice, and cumin. Pulse until pureed.
Add chicken stock and avocado and give a few quick pulses to mix in.
Refrigerate 1-2 hours before serving.
